Courgette, red bell pepper with garlic and oregano
This easy and tasty vegetable recipe only has 4 main ingredients: courgette, red bell pepper, lots of garlic and oregano. I’ve adapted the recipe, originally from Ottolenghi, to my way of cooking (easy and practical), added an extra vegetable ánd some color.
This dish is packed with flavor ánd is super healthy! Not least because of the garlic!! This superfood is packed with vitamins B and C, Manganese, selenium, iron and potassium, but as important: it contains an active ingredient called ALLICIN. Studies have shown that Allicin has great beneficial effects in preventing blood clots, lowering blood pressure, preventing cancer and bacterial infection (it is considered a natural antibiotic).
You only get these health benefits when you use fresh garlic, of course!
This is an ideal recipe if you want to prepare a healthy veggie dish but don’t have a lot of time!

Ingredients
- 3 small courgettes (if medium-sized: 2) – sliced lengthwise (+/- 3 cm long)
- 1/2 red bell pepper cut into small pieces
- 1 cup of vegetable or chicken stock (fresh or from a stock cube *)
- 2 cloves of garlic – cut into very thin slices
- 1 1/2 teaspoon of dried oregano
- salt, pepper, olive oil
- 1 teaspoon of salt flakes
- * If you use stock cubes, make sure that there is no flavor enhancer (= E621 or MSG, Mono Sodium Glutamate) in it because it is very harmful to your health. Normally the BIO versions are free of all weird substances.
Preparation
- Heat the olive oil in a pan over medium heat.
- Add the slices of courgette and pieces of red bell pepper and let it simmer for 5 minutes.
- Season with salt and pepper and half of the oregano
- Add the garlic flakes and the stock and mix well.
- Let it come to a boil for a minute and then put it on a low heat and let the vegetable dish simmer for 5 to 10 minutes under a lid until the courgette is soft and translucent.
- Before serving, add the remaining oregano.
- Once served, add a pinch of salt flakes.
