Sometimes you feel like eating pancakes but you don’t have the time or the ingredients to do so…well, I’ve got the perfect alternatieve for you! These banana egg pancakes (NO flour & milk) are a great breakfast, brunch or snack option. An ideal recipe to prepare with your children, super easy with only 2 ingredients.

Eggs are super healthy: they’re a great source of high quality protein (approx 6,3 gr per egg), vitamins (A, D, E, B5, B12, B2), minerals (iron, selenium, iodine..), anti-inflammatory Omega 3 fats and antioxidants (lutein and zeaxanthin, both important for your eyes!). Eggs are among the best dietary sources of CHOLINE, a nutrient that plays a very important role in our health!

Ingredients

  • 6 eggs 
  • 2 ripe bananas cut in small pieces
 
 
 
 
 

Preparation

  1. Mix the eggs and the banana until you get a creamy “BATTER”
  2. Melt some butter in a pan ON MEDIUM HEAT
  3. Pour the dough in the pan and let it cook very slowly. (LOW TEMPERATURE)
  4. Turn around carefully when golden on one side…cook for another minute…

The recipe is really easy BUT bare in mind that these pancakes/soufflés need to be cooked on a low temperature SO you’ll have to have some patience or use several pans 😉  

Delicious with some extra fruit, cinnamon, chocolate sauce, etc..
