Chestnut flour pancakes - gluten and lactose free

The chestnut flour gives these pancakes a special en delicious flavour and moreover they’re very beneficial for your health!

– They contain a lot of fiber which benefits our intestines and our good intestinal bacteria.
– They are good for your skin and hair and are high in antioxidants
– They are good if you suffer from high blood pressure and water retention.
Chestnuts are “slow carbohydrates“. So they let your blood sugar rise less quickly than, for example, regular wheat flour, so that your insulin level does not rise sharply.
– You get a higher level of satiety due to the fiber and healthy fats that this nut contains. The healthy fats are perfect for heart and blood vessels.
– They contain a lot of Iron, Calcium, Magnesium and Phosphorus. Also vitamin E and B complex (good for the nervous system).

Ingredients

  • 200 gr chestnut flour
  • 100 gr arrowroot flour
  • 3 BIO eggs
  • 300 ml unsweetened coconut or almond drink
  • 350 ml water
  • pinch of salt
  • 1 tablespoon of butter or coconut oil to bake the pancakes

 

Preparation

  1. Beat the eggs and add the salt, then add the coconut milk and water.
  2. Gently add both flours and mix the batter until smooth.
  3. Fry the pancakes in butter or coconut oil.
