Energy boosting mango and coconut mousse

MANGO AND COCONUT MOUSSE

This fresh dessert is so yummy and easy to make, you’ll wanna prepare it every week. More over, because it also contains such healthy nutrients.

The mango is full of fibers (great for digestion), lots of vitamin C (immune system), B vitamins (good for energy and nervous system), vitamin A (good for eyes and skin), ribose (energy!). It helps to prevent diabetes, cancer and high cholesterol. Enough reasons to eat it regularly!

Chia seeds are great source of fibers, antioxidants (great for skin), calcium, zinc and Omega 3 (anti-inflammatory). It reduces cholesterol and helps in weight loss.

Men suffering from prostate problems should avoid eating Chia seeds though!

Ingredients

– 400 ml of unsweetend cocunut drink (bio)
– +/- 250 gr mango (from the freezer or freshly chopped)
– 1/2 ripe banana (for smoothness and sweetness)
– 2 big tablespoons of chia seeds
– 2 tablespoons of grated coconut

Preparation

  1. Mix the coconut drink, mango and banana in a blender – or with a mixer, until completely smooth and foamy. Taste when everything is mixed. If you want some extra sweetness: add some pieces of banana or add extra mango if you want a little more mango flavor.
  2. Put the creamy mixture in a cooking pot and add the chia seeds & the grated coconut.
  3. Heat to medium heat and stir regularly. This way the chia seeds and coconut grater remain evenly distributed over the mousse and the banana does not stick to the bottom.
  4. Bring to a boil and then turn down the heat. Keep stirring for about 5 minutes.
  5. Pour the mousse into small jars. Let cool and put them in the fridge after 20 minutes.
  6. This mousse is ready to be eaten after half an hour in the fridge
You can finish the mousse with a mint leaf and some blueberries or some extra mango.
